The wait staff have also been there for a long time so they know their cus­tomers well and han­dle ques­tions eas­ily. Since the menu is based on tra­di­tional Ja­panese dishes, the way it would be per­fectly served in Ja­pan, the best dishes to try would be their metic­u­lously pre­pared sashimi and sushi, as well as their shabu-shabu. Tsuk­iji’s tuna sashimi is clearly fresh and the por­tion is per­fect for the diner. Their tonkatsu, although not a dish that they are cel­e­brated for, is nonethe­less beau­ti­fully fried. It is moist and grease­less—a good foil for all the fresh items on the menu.
