The cel­e­brated chef Vir­gilio Martinez Veliz (of Peru's award­win­ning Cen­tral restau­rant) un­veils ICHU Peru in Hong Kong's artsy H Queens, ICHU serves con­tem­po­rary Peru­vian cui­sine in a mod­ern, bistro-style set­ting. The dishes, which are meant to be shared, high­light fresh in­gre­di­ents and tra­di­tional flavours. Must­try's are sig­na­ture starters such as the Palta Que­mada (charred av­o­cado) and the Tar­tar de Lo­mo­con Maiz— a burst of flavour us­ing premium wagyu beef striploin with a com­bi­na­tion of corn, carob mo­lasses and scal­lions.
