with The Wholesome Table, the trailblazer in organic dining now with three branches (in Makati, BGC and Capitol Commons), and a husband and four young daughters, former commercial model Bianca admits, “Me time doesn’t really exist!” So when she arrives at the shoot, she takes it all in, asking Ethan David about the Dyson hairdryer and interviewing Omar Ermita about how he curls his lashes, fitting Isabelle’s mules because she wants to make sure they don’t fly off when she runs, and then insisting that Lala Flores supply her with organic avocados and dragon fruits. This is a woman who makes every moment count. “California is a big inspiration for us because they’re just so good with organic food. Imagine, my last trip to LA was just an overnight stay, so my husband and I ate in eight restaurants in one day! We also took our chefs to the Bay Area for inspiration. Last year, I tasted a walnut chorizo, as in the chorizo had no meat at all, just crushed walnuts and herbs and spices. That then inspired our vegetarian paella.”
For her first Preview cover story in March 1997, Bianca took us shopping in Healthy Options to show us the most effective natural beauty products (she loves their selection of shampoos). She revealed that she wished that she could take a course in nutrition. Fast-forward to the present, Bianca is so knowledgeable about organic farming and what constitutes healthy eating, one would easily assume that she is a full-fledged nutritionist. She explains, clearly and concisely, how to detect whether fruits and vegetables are truly organic, and why mainstream agriculture companies are reluctant to switch to organic farming (“It’s all about the money!”). As the placemat manifesto in The Wholesome Table says, “Eat consciously, live consciously. Once your body gets used to eating this way, you will love it, too.” Bianca herself is the best advertisement for eating organically. A mom with a 7-month-old baby daughter, she is slim, glowing and at ease with herself.
