with The Whole­some Ta­ble, the trail­blazer in or­ganic din­ing now with three branches (in Makati, BGC and Capi­tol Com­mons), and a hus­band and four young daugh­ters, for­mer com­mer­cial model Bianca ad­mits, “Me time doesn’t re­ally ex­ist!” So when she ar­rives at the shoot, she takes it all in, ask­ing Ethan David about the Dyson hairdryer and in­ter­view­ing Omar Er­mita about how he curls his lashes, fit­ting Is­abelle’s mules be­cause she wants to make sure they don’t fly off when she runs, and then in­sist­ing that Lala Flores sup­ply her with or­ganic avocados and dragon fruits. This is a woman who makes ev­ery moment count. “Cal­i­for­nia is a big in­spi­ra­tion for us be­cause they’re just so good with or­ganic food. Imag­ine, my last trip to LA was just an overnight stay, so my hus­band and I ate in eight restau­rants in one day! We also took our chefs to the Bay Area for in­spi­ra­tion. Last year, I tasted a wal­nut chorizo, as in the chorizo had no meat at all, just crushed wal­nuts and herbs and spices. That then in­spired our vege­tar­ian paella.”

For her first Pre­view cover story in March 1997, Bianca took us shop­ping in Healthy Op­tions to show us the most ef­fec­tive nat­u­ral beauty prod­ucts (she loves their se­lec­tion of sham­poos). She re­vealed that she wished that she could take a course in nu­tri­tion. Fast-for­ward to the present, Bianca is so knowl­edge­able about or­ganic farm­ing and what con­sti­tutes healthy eat­ing, one would eas­ily as­sume that she is a full-fledged nutri­tion­ist. She ex­plains, clearly and con­cisely, how to de­tect whether fruits and vegeta­bles are truly or­ganic, and why main­stream agri­cul­ture com­pa­nies are re­luc­tant to switch to or­ganic farm­ing (“It’s all about the money!”). As the place­mat man­i­festo in The Whole­some Ta­ble says, “Eat con­sciously, live con­sciously. Once your body gets used to eat­ing this way, you will love it, too.” Bianca her­self is the best ad­ver­tise­ment for eat­ing or­gan­i­cally. A mom with a 7-month-old baby daugh­ter, she is slim, glow­ing and at ease with her­self.
