Joan Zano­ria, the cre­ator and owner, spent a month per­fect­ing her own vari­a­tion of the fa­mous snack that orig­i­nated in Sin­ga­pore. While hav­ing a great run at lo­cal food bazaars with her dif­fer­ently topped mac ‘n cheese, she de­cided to make an­other kind of com­fort food.
