With delicate, paper thin wrappers and fine flavours, classic dumplings such as siu mai and har gow are taken up a notch. • Don’t miss the pièce de résistance: the Peking duck is arguably the best in town with melt-in-your mouth slices of succulent meat and crispy golden skin (served the authentic Beijing way with sugar and home-made garlic sauce). Don’t forget to order in advance as it takes at least an hour of preparatio­n.

• Balance this off nicely with braised sea bass with ginger, garlic and black bean, one of the chef’s signature dishes.
