Camote Chickpea Toppers

1 whole camote
1 can chickpeas or 1/2 cup dried chickpeas 1/2 red onion, chopped
1 tomato, diced
3 sprigs wansoy or coriander, chopped 2 calamansi
Peel the camote and boil until tender. Meanwhile, drain the chickpeas from the can or boil the dried ones. In a bowl, squeeze the calamansi over the chickpeas. Add the diced onion, tomatoes and chopped wansoy. Season with salt and pepper. Mash the boiled camote down the middle. Top with the chickpea mixture.
