Watermelon and Cilantro Refresca

This Mexican joint situated in the heart of General Luna in Siargao shakes up a deliciously fresh cocktail bursting with flavour and enough zing to get your hips loose and ready to salsa.

INGREDIENTS

45ml good tequila

10 ml watermelon syrup

15 ml agave

30 ml lemon juice splash of soda water cilantro leaves cilantro sprig and watermelon for garnish

EQUIPMENT Cocktail shaker Large wine glass

Mix the tequila, watermelon syrup, agave, a few cilantro leaves and lemon juice in a shaker with ice. Give it a good shake and pour everything in a glass. Top with soda water. Garnish with a slice of watermelon and a sprig of cilantro.
