Homemade Strawberry Black Pepper Syrup

Highball glass

Muddle Thai basil and strawberry syrup. Add gin, lemon and egg white then dry shake. Add ice then hard shake. Double strain mixture in a highball. Top off with soda water. Garnish: dehydrated lime wheel, Thai basil and cracked black pepper.

If you want to take things to the next level? Make your own strawberry and black pepper syrup which you can use instead of strawberry syrup and black pepper, garnishing with the lime and basil only.

INGREDIENT­S

300g Strawberry 50g Black pepper 300g Sugar 300g Water

EQUIPMENT

Mixing bowl or jar Small pot or sauce pan Strainer Cheeseclot­h

Muddle all ingredient­s before adding water. Put on medium heat. Stir until sugar granules dissolve Rest for 3 hours. Triple strain (twice with fine strain, once with cheeseclot­h).
