The Asian ceviche is refreshing and surprising­ly light. The clever combinatio­n of grouper), octopus slices, lime juice, dalandan juice, coconut milk and other spices,is given dimension and texture by the addition of fresh coriander leaves and crispy ginger. As a main, the char-grilled Peruvian pork adobo with a twist is deeply satisfying. One should reserve space for the pièce de résistance, the merengado guanabana. Blending soursop cream, crispy almond meringue, fresh blueberrie­s, strawberry coulis, and served in a white chocolate balloon, it is light yet rich; sweet yet with the right amount of tartness.
