Come wine with me, Argentina
Tita Trillo of Titania Wine Cellar hosted an Argentine wine- pairing feast prepared by chef Roberto Cimmino of Paparazzi restaurant at the EDSA Shangri-La Hotel. Cimmino’s excellent food was complemented by Argentine wines from Bodegas Santa Ana.
Six of Bodegas Santa Ana’s top wines from Mendoza, Argentina were poured to complement each dish on the six- course menu to the delight of the guests.
A ginger, avocado, queso fresco, cilantro and tomato tostada was served together with a Santa Ana Torrontes. This was followed by seared sea scallop with vanilla beurre blanc sauce on diced papaya doused in a citrus and olive oil emulsion paired with a Santa
Ana Malbec Reserve. Peach
sorbet bellini was served to cleanse our palates.
Our main course consisted of a platter of char-grilled beef tenderloin with chimichurri sauce on a bed of mashed
sweet potatoes and cured pork tenderloin on a bed of diced sugar beets. This was paired with a red La Mascota Malbec.
Next was a selection of aged fruit mustard. Unanime Gran Vino Tinto 2007 was served to complement the cheeses. wine to win a Decanter Trophy Award, the highest rating ever given to an Argentine wine. Dessert was dulce de leche gelato on a coulis of syrupy squash bits, bollas de fraile and churros.
Argentine wine has always fascinated me and with this wine-pairing dinner prepared by Roberto, I shall probably continue to be fascinated with this country’s wonderful wine!
