Bait’s Seafood Kitchen is a market-driven seafood restaurant in Manila helmed by two-time nominee of Food & Wine Magazine’s People’s Best New Chef Joseph Margate. Fresh from his stint at Jardinière in San Francisco, Lark in Seattle, Eleven Madison Park in New York, and Clink in Boston, Joseph came home to Manila to bring a concept that takes seafood to a whole new level.
Chef Joseph Margate partnered with The Mothership F&B Group in giving predominantly fresh seafood menu in a cozy open-kitchen setting in the new Salcedo Village branch in Makati City. Joseph said, “The restaurant scene in Manila is booming and I want to be a part of it.” Joseph headlined the night with a 12- course tasting dinner giving the guests a taste of the best from his restaurant’s menu. He has refined a menu that showcases his classically-trained European technique coupled with the abundance of fresh seafood from different parts of the Philippines. “Right now, we’re focusing a lot on what we can get in Manila, but we will eventually be exploring different provinces in the country and see what we can offer in the restaurant,” he added.
Bait’s offers fine, sustainable and locally-sourced food from the sea depending on the day’s catch, making the menu change according to what’s in season. “We’re trying to do something that’s different and work on whatever is fresh and seasonal by taking
very common ingredients that you find in the market and give it my twist on things,” Joseph shared.
Other selections in the menu include meat and vegetarian dishes paired with wine, craft beers and bottled cocktails perfect for work lunches or an after- hours hangout
