Seda hotels launch Chefs Exchange program

To excite diners in its four properties around the country, Seda hotels recently launched its Chefs Exchange program, allowing head chefs of this wholly- owned and managed AyalaLand Hotels and Resorts Corp. brand to show off their specialtie­s in other Seda locations.

Starting today up to May 30, Seda BGC’s executive chef Romualdo “Pepe” Castillo will whip up internatio­nal specialtie­s at Seda Centrio for “A Taste of BGC” in Cagayan de Oro City. He will serve bestseller­s from Seda’s flagship property in Bonifacio Global City in Taguig, Metro Manila to expectant Northern Mindanao diners. The dishes are designed to impress by their authentic taste as well as their creative presentati­ons inspired by the chef’s exposure to a global audience at the newest and most modern community in the Philippine­s, Bonifacio Global City.

Hotel guests like to see constant innovation in the menus served them, says Castillo. Thus, Seda has arranged for its head chefs to present their specialtie­s beyond the confines of the properties they serve. When he takes the culinary stage for “A Taste of BGC” at Seda Centrio, he will focus on internatio­nal dishes, plus a new and creative range of desserts. He will offer a threecours­e set lunch on May 25-29 and buffet dinner on May 25-30 at Seda’s signature restaurant, Misto.

On the same dates, executive sous chef Danilo Gallardo of Seda Nuvali will be serving Japanese fare at Seda Abreeza in Davao City.

Chef Danny has over 14 years of experience cooking up Japanese dishes in major hotels across the globe. He has worked as a chef catering exclusivel­y to Japanese expats in a major multinatio­nal corporatio­n, and was asked to open a Japanese restaurant in a five-star hotel after one of its Japanese owners found his cooking of Japanese dishes highly impressive.

Chef Danny will offer buffet fare, a la carte items, and set menus in Seda Abreeza on May 25-30. These include alltime favorites sushi, sashimi, and tempura, as well as teriyaki, katsudon, yakitori, and so much more.

Chef Giovanna Flores of Seda Abreeza, for her part, recently presented Nuvali diners with Mindanao specialtie­s like chicken pianggang spiced with garlic, ginger, lemongrass and chili over grated coconut. This dish with strong Indian and Malay influences is popular among Lanao and Maranaw foodies. Even more interestin­g, she served pomelo crème brulee and sinuglaw of the freshest blue marlin to highlight popular ingredient­s from her region.

The four Seda hotels in BGC, Davao, Nuvali and Cagayan de Oro have a common restaurant named Misto, the Italian word for “mixed.” Every Misto offers dishes to please the palate of global travellers as well specialtie­s linked to its particular location. The Seda “chefs’ exchange” also allows the infusion of new entrees and other dishes that have been tested and warmly received in other properties.
