Green Chicken Skewers

Ingredient­s:

1 cup plain yogurt 3 cloves of garlic peeled 2 tablespoon­s of finely grated fresh ginger 2 teaspoons cumin 1 teaspoon ground coriander 1 teaspoon ground ginger 1 green chili 1 bunch fresh cilantro a few sprigs of mint leaves juice of 2 limes salt and pepper 4 chicken breasts cut into small pieces extra limes for serving extra fresh cilantro for garnish

Yogurt dipping sauce:

½ cup of plain yogurt 2 tablespoon­s extra virgin olive oil a few sprigs of fresh mint finely chopped a dash of chili powder salt and pepper to taste

Tomato and Onion Salad:

1 large tomato chopped into small cubes ½ white onion minced juice of half a lime a dash of cumin and ground mustard seed salt and pepper

Preparatio­n:

1. In a food processor mix the yogurt, peeled garlic, fresh ginger, cumin, coriander, ground ginger, green chili, fresh cilantro, fresh mint and lime juice. Blast till a smooth paste. Add some olive oil and season with salt and pepper.

2. Transfer this mixture to a bowl or ziplock bag and use it to marinate the pieces of chicken breast for at least 30 minutes to even better – overnight.

3. After marinating, assemble the chicken on pre- soaked skewers.

4. Grill on high until cooked through and a bit charred. Season to taste if necessary.

5. For the tomato and onion salad, mix the chopped onion and tomato in a small bowl with the lime juice and spices. You may garnish with some parsley if you wish.

6. For the yogurt sauce mix the yogurt, olive oil, fresh herbs and chili powder all together and season with salt and pepper to taste.

7. Plate the skewers with the tomato onion salad on the side as well as the dipping sauce. Serve garnished with more herbs and freshly grated lime zest along with grilled quarters of lime.
