Palanca’s lat­est col­lec­tion of food es­says, en­ti­tled The Gul­let: Dis­patches on Philip­pine Food, was pub­lished in 2016. “I’m work­ing on a book project on Min­danao food,” Palanca shares. “I’m re­ally look­ing for­ward to ex­plor­ing Min­danao, be­cause it doesn’t get much cov­er­age apart from con­flict re­ports.”
