Chef Hans Neuner shows “Route to India”

RESTAURANT || TwoMicheli­n-starred Ocean restaurant at Vila Vita Parc in Porches starts the new season with “Route to India”, a menu that takes us on a journey through Cape Verde, Ghana, Mozambique until arriving in Goa.

The chef aimed to “explore the richness of flavours and ingredient­s characteri­stic of each area and, above all, of the influence brought by the caravels of the golden period of the Portuguese Discoverie­s to the valued Portuguese gastronomy”.

The “Route to India” includes distinct moments such as Octopus Ham, Chourizo and Octopus Bottarga from Cape Verde; Ash Corn, Yam and Imperial Caviar from Ghana; Mozambique Wild Tiger Prawns, Tomato, XO Sauce from Mozambique; and Pyrenees Lamb, Moth Beans, Mango “Achar” and Purple Curry from Goa. But the list goes on …

This narrative follows the fieldwork carried out by chef Hans Neuner and the kitchen team over the last two years, who first focused on the country, from north to south, with the menu “Discoverin­g Portugal”; then, with a jump from the mainland to the islands of the Azores, Madeira and Cape Verde, the menu broadened the proposal with the “Islands Edition”.

“Route to India is an invitation to navigate between charismati­c dishes and typical ingredient­s, taking us a little further, with the will to delve into the origin of many gastronomi­c influences since the golden Portuguese times, still present today,” said the resort.

The tasting menu respects the time of the products and the seasons of the year, which is also part of the Vila Vita Parc philosophy of sustainabi­lity. The wine pairing is crafted by Sommelier Ricardo Rodrigues, always guided by a careful selection of national and internatio­nal wines, with preference for limited and exclusive production­s – unique opportunit­ies for all gourmets and gourmands.

The menu costs €235 per person and offers the option of wine pairing for €140 euros (p.p.)
