Costs for running a commercial kitchen are considerable, particularly when inefficient equipment is used. According to the Carbon Trust, energy used in catering accounts for between 4 percent and 6 percent of operating profits.

The region’s changing demographic also presents a new challenge to the industry; the GCC is one of the most urbanized regions in the world, with over 75 percent of the population living in urban areas. With global macroeconomic conditions subduing consumer spending, restaurants will gain a considerable advantage by catering to this time-poor customer through creative dining and café experiences, with a focus on ambience and décor.
