Perched on the 45th floor of the Singapore Land Tower is LES45, a new mod­ern Mex­i­can res­tau­rant. Opened by Hid­den Door Con­cepts and helmed by ex­ec­u­tive chef Jorge An­to­nio Rosas León (for­merly the chef con­sul­tant at Hom­bre Cantina), LES45 dishes up delecta­bles such as the re­fresh­ing Scal­lop Aguachile, Av­o­cado and Pick­led Ji­cama ($25) and the Asianac­cented Chicken Tinga Tostadas with Mango Gua­camole and Wasabi Fried Egg ($18). Come as a group and be served ta­ble­side by León when you or­der the Fresh Gua­camole En Mol­ca­jete ($30). Watch as the fresh in­gre­di­ents are mixed to­gether in the tra­di­tional stone mor­tar, the mol­ca­jete, be­fore dip­ping your na­chos in and wash­ing it all down with some Mex­i­can te­quila.
