“We’re drinkers first,” says director Kelvin Hoon, who together with friends have opened The Swan Song while juggling full-time careers. Well-versed drinkers can access the owners’ Scotch collection by dram, hence sharing the ‘swan song’ of a bottle that might be gone forever. There are 450 vintage bottles, including very fine Ledaig 1971 Castle Label bottled by Sestante ($80/20ml), Laphroaig 1965 ($210/20ml) and flights such as Islay Peat ($55 for four drams). The young duo of Kim Shin, formerly Jigger & Pony, and Jayden Ong, ex-sugarhall, have identified an aesthetic that was lacking in the scene – minimal and back to basics. The 12-drink Pollen menu contains fine inspiratio­ns, from the low-abv Rose (gin, rose water, peach and ginger beer) to spirit-forward Chamomile (Cognac, rye, rosso and agave), at $22 each.
