CHOCOLATE ORANGE BRIOCHE

Makes 40 pieces

Prep time 2 hours 30 minutes + 3 days refrigerat­ion

Cook time 1 hour 30 minutes

soaked orange peel 350g orange peel 10g salt

1.5 litres water 500g sugar

1 pc vanilla pod

1.1 Boil orange peel and salt in 1 litre water for 20 minutes, stirring occasional­ly. Strain mixture and dice the boiled orange peel. 1.2 Bring the remaining water to a boil. Add sugar, vanilla pod and diced orange peel. Boil for 30 minutes. Set aside to cool and refrigerat­e for 3 days.

187.5g unsalted butter 150g sugar 300g cake flour 1½ oranges, zested

2.1 In the bowl of a stand mixer, use a paddle attachment to mix all the ingredient­s together until grainy. Refrigerat­e for at least 2 hours.

brioche base

652.5g bread flour 22.5g cocoa powder 6.75g bread improvers 67.5g sugar 13.5g salt

18g yeast

300g eggs, chilled 150ml milk, chilled 120g chocolate chips 300g unsalted butter soaked orange peel, diced spray oil

3.1

Except for the butter and diced orange peel, put all ingredient­s into the bowl of a stand mixer and mix at slow speed for 3 minutes. Switch to a faster speed and mix for an additional 6 minutes, slowly adding in the butter and diced orange peel.

3.2 Grease the bottom of a large, rectangula­r box with a lid using spray oil. Place brioche dough in the box and rest covered for 15 minutes.

3.3 On a floured surface, fold dough into a dome shape and return to the box to rest covered for another 15 minutes.

3.4 On a floured surface again, lightly dust dough with flour and flatten. Measure and divide dough into 50 equal pieces by weight. Roll each piece into a ball and let them rest for 15 minutes.

3.5 Shape balls into little brioches. Allow dough to rest for 1 hour, covered in a warm place.

3.6 Remove dough from the prover and airdry for 12 minutes.

4.1 Preheat oven to 200°C.

4.2 Brush each brioche with egg wash. Using a knife, make a slit in the dough for design. 4.3 Liberally sprinkle crumble on each brioche, and bake for 10 minutes. Check out epicure on Youtube for a behindthe-scenes video of this masterclas­s.
