2017 was clearly Luke Selby’s year. He was named the winner of the Roux Scholarship in 2017, which resulted in a training stint at three Michelin-starred restaurant Nihonryori Ryugin in Tokyo, and went on to receive the U.K.’S National Chef of the Year 2017 award Now, the rising star is the head chef of Ollie Dabbous’s newest venture, HIDE Above. The menu showcases humble seasonal ingredients transformed into elegant dishes, like the Nest Egg, made up of coddled eggs, smoked butter and mushrooms and presented in egg shells resting on a bed of hay.
