2017 was clearly Luke Selby’s year. He was named the win­ner of the Roux Schol­ar­ship in 2017, which re­sulted in a train­ing stint at three Miche­lin-starred restau­rant Ni­hon­ry­ori Ryu­gin in Tokyo, and went on to re­ceive the U.K.’S Na­tional Chef of the Year 2017 award Now, the ris­ing star is the head chef of Ol­lie Dab­bous’s new­est ven­ture, HIDE Above. The menu show­cases hum­ble sea­sonal in­gre­di­ents trans­formed into el­e­gant dishes, like the Nest Egg, made up of cod­dled eggs, smoked but­ter and mush­rooms and pre­sented in egg shells rest­ing on a bed of hay.
