BEEF SATAY WITH PINEAPPLE SAUCE
Serves 6 Prep time 45 minutes
500g beef fillet Satay sticks
ground paste
2 candlenuts
1 clove garlic
2 slices ginger
4 shallots
2 tsp coriander
1 tsp turmeric
1 tsp cumin
1 tsp salt
2 tbsp palm sugar
3 tbsp pounded roasted peanuts
satay sauce with pineapple 250g pounded roasted peanuts 3 cloves garlic
2 tbsp chilli
2 stalks of lemongrass
1 tbsp tamarind to 100ml water 4 tbsp palm sugar
2 tsp salt 100ml water
6 tbsp oil fresh pineapple, chopped
•Slice the beef into 20mm pieces.
Mix the ground paste into the meat. Thread the 4-5 pieces of the meat into the sticks. Leave covered to marinate overnight. Remove from the fridge an hour before grilling. Brush with oil and chargrill the meat to your liking.
•In a hot pan, add the oil, fry the shallots chilli, lemon grass and garlic until fragrant. Gradually add in the tamarind water. Finally, add the pounded roasted peanuts and water. Simmer for 15 minutes till thick. Add palm sugar and salt to taste.
•Before serving, drop in a large spoonful off fresh chopped pineapple and mix it with the peanut sauce.
