100g heir­loom toma­toes

20ml white bal­samic vine­gar sea salt flakes, to sea­son pep­per, to sea­son

4 large Si­cil­ian red prawns (avail­able from Culina) a dash of ex­tra vir­gin olive oil

2 sprigs of fresh rose­mary » Mix heir­loom toma­toes and white baslsamic vine­gar. Sea­son with salt and pep­per. Set aside.

» Sea­son prawns with olive oil and fresh rose­mary.

» Place prawns on a grill for 15 sec­onds. » Serve prawns with heir­loom toma­toes salad.
