We are cheer­ing for homegrown gin dis­tillery Brass Lion, which has opened a beau­ti­fully de­signed stand­alone ware­house and dis­tillery space in the west. Man­ag­ing di­rec­tor and head dis­tiller Jamie Koh took years to per­fect the Sin­ga­pore Dry Gin ($88/500ml) that’s au­da­cious in its torch gin­ger flower, pomelo peel and lemon­grass flavour notes. The herbs and spices, in­clud­ing spe­cially sourced Mace­do­nian ju­niper berries, come to­gether in a 150-litre Ger­man hy­brid pot still, chris­tened Nala. More flavours are in the works.
