Un­cork the right wines for the oc­ca­sion

Daisuke Kawai, 41, is one of the most driven and re­spected se­nior som­me­liers in Sin­ga­pore. Mov­ing to Sin­ga­pore in 2010, he was Les Amis’ chief som­me­lier for three years. Now as co-founder of La Terre fine wine bar, he con­stantly strives to bet­ter him­self – which has led to him win­ning the ti­tle of Asia’s Best Som­me­lier in French Wines in 2017, and Sin­ga­pore’s Best Som­me­lier for Cal­i­for­nia Wines 2018 while also ven­tur­ing into wine judg­ing and ed­u­ca­tion. “I want to know the world through wine,” he avers humbly. His ad­vice to find the wines you en­joy: take pho­tos and re­mem­ber the grape va­ri­ety of wines that ap­peal to you, and show these to the som­me­lier who will be able to rec­om­mend sim­i­lar styles to suit your palate.
