Pandora’s Garden
The owners of Brightside have opened a specialist Rosé and gin bar, with Singapore’s largest collection of pink wine numbering over 30 labels. Chill out at the outdoor patio with a retractable roof, enclosing an ancient frangipani tree with roots reaching under Ann Siang House. The list encompasses light to complex styles, such as Chateau Cavalier ($17/glass) with a crisp, citrus palate and spice complexity, to Whispering Angel, oft-awarded the world’s best Rosé ($130-535). Champagne lovers are not left out, with Louis Roederer and Krug filling out the list to complement the picnic style menu of cheeses, British pork pie and cold cuts. 28 Ann Siang Road. Tel: 9485 4226
Eliza
Continuing the story of Sum Yi Tai and Mona Lounge is Eliza, a modern-day Asian bar and cocktail club that plays live Shanghai pop-jazz and DJ nu-disco. What we love are group bartender Sam Wong’s excellent cocktails, here divided into Vintage, Classic and Signature. Custom Cut ($22) presents a frozen block of Campari that slowly changes the drink as it melts, while Drums & Sax ($22) replaces Old Tom Gin in this Old Fashioned drink with chamomile syrup and ginger liqueur. You can now taste the flavours inspired by the hip-hop movement at Queens, the newest Zouk cocktail bar that replaces the former whisky room. The unconventional Blaq Poet (all drinks $25) interprets Jungle Bird with coffee and cardamom, while the Breakdancing category offers up a smooth butterwashed Oloroso Sherry with vermouth.
