Poldo is made only in excellent vintage years, when a strict selection of grapes destined for Vino Nobile di Montepulci­ano are used to make this full-bodied blend of 80% Sangiovese, 10% Merlot and 10% Mammolo. The estate is led by an all-female team of mother and daughters, who harvest grapes manually and work with sustainabl­e methods on the fruit. Rested undergroun­d for 34 months in oak barrels, the wine is kept for two years after bottling. If drinking now, decant it fully to release its hints of violets and wild berries, with savoury nuances of spices. Great with game like venison, or traditiona­l Tuscan stews. $117 from Wine
