Poldo is made only in ex­cel­lent vin­tage years, when a strict se­lec­tion of grapes des­tined for Vino No­bile di Mon­tepul­ciano are used to make this full-bod­ied blend of 80% San­giovese, 10% Mer­lot and 10% Mam­molo. The es­tate is led by an all-fe­male team of mother and daugh­ters, who har­vest grapes man­u­ally and work with sus­tain­able meth­ods on the fruit. Rested un­der­ground for 34 months in oak bar­rels, the wine is kept for two years after bot­tling. If drink­ing now, de­cant it fully to re­lease its hints of vi­o­lets and wild berries, with savoury nu­ances of spices. Great with game like veni­son, or tra­di­tional Tus­can stews. $117 from Wine
