As one of the most com­plex sips around, it takes time to un­der­stand and savour Louis XIII. In a first for Asia, the Co­gnac house has de­vel­oped a pre-din­ner con­cept to­gether with 28 Wilkie, called The Five Sen­sa­tions of Louis XIII ($350/per­son) that deep­ens even the most jaded con­nois­seur’s ex­pe­ri­ence of some 250 flavours and aro­mas of the ma­ture eaux de vie. Kaluga Hy­brid Caviar starts off the five pair­ings, with the mild caviar’s nutty flavour a sur­pris­ing yet nat­u­ral foil for the Co­gnac. A bite of lob­ster, a soft hibis­cus and pome­gran­ate sor­bet, wafer-thin ja­mon Bel­lota and Wagyu beef tartare with Pom­mery mus­tard ar­rive in that or­der, each bring­ing out a dif­fer­ent di­men­sion to the same Co­gnac. #01-01, 28 Wilkie Road. Priced from $44 to $55, the bento-like tray ar­rives with hand­picked wines in themes that in­clude Old and New World reds, and our favourite – the sparklings. A se­lec­tion of Tor­re­sella Brut Pros­ecco NV, Franck Mas­sard Mas Sar­dana Cava and Piper Hei­d­sieck Brut NV is paired with de­light­ful veg­e­tar­ian maki roll, salmon tartare and pan-seared scal­lop for a non-in­tim­i­dat­ing way to en­joy learn­ing and tast­ing wines.
