Monti ups the ante with its Fiorentina Ex­pe­ri­ence, com­pris­ing three care­fully cho­sen Aus­tralian T-bone of­fer­ings (all ap­prox­i­mately 1.1kg). The Rangers Val­ley Black Onyx ($180) at MB3+ is a Black An­gus that’s ex­pect­edly ro­bust with a juicy chew, while the San­choku F1 Wagyu ($220) at MB5 of­fers more in­ter­est­ing mar­bling and flavour, thanks to its cross­bred Wagyu genes. For con­nois­seurs, the Mayura Full-blood Wagyu ($320) at MS9+ can’t be missed. Mayura’s T-bone cut is ex­clu­sive to Monti, and here it’s charred per­fectly to re­lease a but­tery, nutty flavour along with the meat’s silky tex­ture. Look out for the House of Ravi­oli menu, which starts on 1 March. The lus­cious plates of lob­ster and prawn ravi­oli and but­ter­nut squash tortel­loni (prices un­avail­able at press time) car­ried their tra­di­tional flavours proudly, akin to “a trip into Ital­ian cul­ture, with Ital­ian grand­mas,” quipped gen­eral man­ager Mas­simo Aquaro. 82 Col­lyer Quay. The five-course Surf & Turf menu ($68), which changes monthly, of­fers am­ple choices of Cana­dian oys­ters, filet mignon Wooloomool­oo salad, hand-chopped beef tartare, spiced span­ner crab lin­guine, and USDA Prime rib­eye ($20 sup­ple­ment), fin­ish­ing with ti­ramisu or cho­co­late flan. The well-cal­i­brated mix of dainty and hearty por­tions are best matched with free-flow Lau­rent-per­rier La Cu­vée ($128 for brunch and free-flow), an el­e­gantly smooth non-vin­tage Cham­pagne. It’s a fam­ily-friendly af­fair, as kids have the choice of beef burg­ers or fish and chips and a dessert ($20 per child with free-flow soft drinks).
