Monti ups the ante with its Fiorentina Experience, comprising three carefully chosen Australian T-bone offerings (all approximately 1.1kg). The Rangers Valley Black Onyx ($180) at MB3+ is a Black Angus that’s expectedly robust with a juicy chew, while the Sanchoku F1 Wagyu ($220) at MB5 offers more interesting marbling and flavour, thanks to its crossbred Wagyu genes. For connoisseurs, the Mayura Full-blood Wagyu ($320) at MS9+ can’t be missed. Mayura’s T-bone cut is exclusive to Monti, and here it’s charred perfectly to release a buttery, nutty flavour along with the meat’s silky texture. Look out for the House of Ravioli menu, which starts on 1 March. The five-course Surf & Turf menu ($68), which changes monthly, offers ample choices of Canadian oysters, filet mignon Wooloomooloo salad, hand-chopped beef tartare, spiced spanner crab linguine, and USDA Prime ribeye ($20 supplement), finishing with tiramisu or chocolate flan. The well-calibrated mix of dainty and hearty portions are best matched with free-flow Laurent-perrier La Cuvée ($128 for brunch and free-flow), an elegantly smooth non-vintage Champagne.
