The brainchild of British chef Simon Rogan, the 12-seater Aulis brings a taste of his two Michelin-starred L’enclume to Hong Kong. The multi-functional space and experimental hub offers a unique chef’s table experience: patrons dine on the season’s freshest produce from farms in the New Territories. Dishes include the Five Flavour Cod Fish, boasting flash-steamed and blowtorched cod sitting atop a bed of black garlic purée and a topping of roasted red cabbage. It’s complemented with a spice-infused seaweed sauce (vanilla, licorice, orange, lime and mint). The creative 10-course menu (with up to 15 course servings) is priced from HKD1,480/S$260 (with an additional HKD$680/S$121 for wine pairing).
