Aman Tokyo’s latest culinary addition has a lot going for it. Musashi by Aman is perched on the 34th floor of the hotel and boasts views of the city skyline and Mount Fuji in the distance. Get a front-row seat as Hiroyuki Musashi of Michelin-starred Sushi Musashi crafts delicious morsels from an intimate Hinoki wooden counter meant for eight guests. Inspired by the Tokyo Bay area and the abundance of fresh seafood from the newly opened Toyosu Fish Market, the edomae style sushi (JPY25,000/S$306) features shari (rice soaked in white vinegar) paired with eight kinds of premium sakes, including a perfectly balanced Hakurakuse­i (junmai daiginjo), and the exclusive Musashi Sake with a rice-polishing ratio of 7 percent. Both sakes are created especially for the restaurant by renowned Niizawa Brewery in Miyagi.

The restaurant’s interior is also the careful handiwork of local artisans; a small corridor leading to the entrance is created by stonecutte­r Masatoshi Izumi, while the stucco wall is crafted by plasterer Naoki Kusumi. Tableware includes custom made plates by ceramicist Shigeo Tanaka, and traditiona­l Japanese lacquerwar­e from Wajima. Sake is served in Toru Horiguchi hand-cut kiriko glasses.
