Between the flagship eatery in Lam Soon Industrial Building and a decidedly more upscale Chijmes branch, New Ubin Seafood’s third opening in the four-star Ramada by Wyndham at Zhongshan Park hotel offers a more accessible middle ground to enjoy its sinful but oh-so-good tzi char fare. Think Heart Attack Fried Rice, where the grains are wokfried with rib-eye beef drippings, and medium-rare USDA Black Angus ‘Choice’ Rib-eye, which is grilled over coals and sided with caramelise­d onions and Idaho potato wedges.

What also deserves special mention are the Boss Bee Hoon ($12), which is crispy and comes with a slight wok hei aroma, and the Garlic Baked Live Mud Crab ($98/kg).
