Goats Cheese Parfait wit h Berries and White Chocolate

Serves 1

Prep time 20 minutes + 2 hours freezing Cook time 30 minutes

• 150ml egg yolk

• 150g sugar

• 30ml glucose syrup

• 500ml cream

• 3 gelatin sheets, bloomed

• 300g goat cheese

• salt, to taste

» In a stand mixer, mix egg yolk, sugar and glucose syrup until mixture increases twice in volume.

» In a pot, bring 150ml cream to a simmer and then whisk in bloomed gelatin sheets. » Once the mixture has increased in volume, whisk in the remaining 350ml until soft peaks form.

» In a mixing bowl, whisk all the ingredient­s together. Season with salt. » Transfer the parfait to three half gastro trays lined with baking parchment and allow to set in freezer for two hours. berry jam

• 300g blackberry purée • 3g agar agar powder

» In a pot, bring all ingredient­s to a boil. » Pour the purée into a container and set it in the fridge until it is solid.

» In a blender, blend the solid purée until a soft consistenc­y is achieved.

white chocolate crumble

• 50g cornflour

• 25g sugar

• 60g milk powder

• 100g white chocolate, melted

• 50g butter, melted

» Pre-heat the oven to 160°C.

» Mix cornflour, sugar and milk powder together, then pour the mixture over the melted butter and white chocolate. Mix it until a crumbly texture is achieved.

» Bake the mixture for 10 minutes.

» Cut the goat cheese parfait into 5cm squares.

» On a plate, place the goat cheese parfait then garnish with fresh berries, berry jam and sprinkle with white chocolate crumble.
