Mother’s Day menus, Jewel Changi Airport openings

London-based chain Burger & Lobster will enter Singapore later this month, and its location befits the quality of its ingredient­s. Perched at the top Canopy Park level of Jewel, guests will be able to soak up the atmosphere of the surroundin­g Shiseido Forest Valley and views of the indoor waterfall. Their signature Lobster Roll, generously buttered brioche enveloping plump morsels of sweet Canadian lobster, finished with Japanese mayonnaise and a drizzle of lemon juice, is not to be missed. #05-203.

Japan Way 360 (JW360) is a Japanese concept store housed within the airport’s retail cum lifestyle space. It's divided into three distinct sections: a restaurant run by Suju Masayuki; a café serving Japanese sweets and gelato; and Nomono, a retail corner selling souvenirs and specialty treats. You'll find products from various prefecture­s in Japan, which will be refreshed according to the seasons. Food-wise, expect straightfo­rward Japanese fare like the Hamburg Steak Lunch Set ($42). An umamiladen demi-glace (courtesy of two types of miso) drenches the moist beef patty which is served with rice and miso soup. #01-223-225.

Shangri-la Group marks its first dining establishm­ent outside of their hotels, Shang

Social. The 220-seater consists of a cocktail bar (BAR), formal dining space (DINING), and casual market (MRKT) and offers a collection of signature dishes from Shangrila Group’s Chinese chefs. Shangri-la Singapore’s executive chef Mok Kit Keung’s Deep-fried Boneless Chicken filled with Fried Glutinous Rice ($78) is available along with Shangri-la Hotel Nanjing’s executive chef Joe Hou's Braised Black Marbled Pork ($26). Fans of spicy food can also enjoy Shangri-la Hotel Shenyang’s executive chef Rick Du’s sizzling Sichuan mainstays such as Spicy Sichuan Chicken ($22).

Grab a seat at the bar for cocktails using Chinese liquors and ingredient­s, or order a refreshing glass of Shang’s Sparkling Tea ($6.80)— light with a herbal taste and lychee aroma. #01-219-222. Tel: 6346 0260

The man behind OLA Cocina Del Mar and TONO Cevicheria, Daniel Chavez, introduces another sibling, TONITO Latin American Kitchen. Comfort foods from Peru, Argentina, Mexico and Cuba form the majority of TONITO'S menu, which are served in a family-friendly setting. (There’s also a kids menu.) The tacos ($18/pair) are a big winner; the 100% corn tortillas impart a strong, robust flavour that are sorely missing in flour tortillas. Go for the Pork Tacos where glistening cubes of pork belly are topped with charred onions, chorizo and pico de gallo. Hearty eaters will be satiated by their Torta ($18), a sandwich bursting at the seams with grilled chicken, guacamole and an addictivel­y hot chipotle aioli. #02-248. Tel: 6904 3975

In the past, other American burger chains have attempted to make a splash on the Singapore fast-casual dining scene but with mixed results (Fatburger and Wendy’s). However, none of them have generated the amount of buzz that came with Shake Shack’s entrance. The widely popular New York-based chain has been widely quoted as the producer of the world’s best burger. It’s a big claim, but The Shackburge­r ($9.20) does boast a juicy patty bursting with the flavour of all-natural Angus beef. Singaporea­n-inspired offerings are also available here, from a Pandan Shake to a mango sago frozen custard. #02-256.
