Alas­dair Day has a se­cret recipe – a cel­lar book recorded by his great-grand­fa­ther Richard Day, a master whisky blen­der in Cold­stream, Scotland in the 19th cen­tury. He’s since recre­ated the Tweed­dale Blends start­ing in 2009, re­sult­ing in the cur­rent edi­tion, The Evo­lu­tion 28 Year Old. At 52% non-chill fil­tered, this will ap­peal to the sea­soned whisky drinker, with its rich black­cur­rant and sticky date tof­fee notes, and an oily, mus­cu­lar struc­ture rem­i­nis­cent of – dare we say – Mort­lach.
