John Dory Frit­ter, Sin­ga­pore Chilli Crab Dip

An­other al­ter­na­tive to the highly ad­dic­tive pil­lowy man­tous, the golden brown John Dory Frit­ters pair well with the scrump­tious chilli crab dip. Serves 4

Prep time 30 min­utes Cook time 10 min­utes

• 60g John Dory fil­lets • a pinch of salt

• a pinch of pep­per • 1⁄2 tsp corn­starch • 10g egg white

• 250g flour

• 200g tem­pura flour » Mari­nade the John Dory fil­lets with salt and pep­per.

» Mix egg white and corn­starch to the mar­i­nated John Dory fil­lets. Set aside in the fridge for half an hour.

» Dust the John Dory fil­lets with flour and coat with the tem­pura bat­ter.

» Deep-fry the coated John Dory fil­lets in 180°C oil un­til golden brown.

» Serve with Chilli Crab dip.
