Up on the sev­enth floor of Fu­nan Mall, 72-seater NOKA adds to the al­ready crowded Ja­panese restau­rant scene in Sin­ga­pore. Its ad­van­tage? A 5,000 sq ft rooftop ur­ban farm run by Ed­i­ble Gar­den City grows pes­ti­cide-free herbs, mi­cro­greens and veg­eta­bles like lemon balm, basil, but­ter­fly pea flow­ers and purslane, which are fea­tured lib­er­ally on head chef Seki Takuma’s omakase and à la carte dishes. Care­fully sourced pro­duce like the Snow Aged Ni­igata Wagyu ($89) are al­lowed to shine with just a sprin­kle of rooftop herbs and a un­com­pli­cated yuzu ponzu dress­ing, while the typ­i­cally but­tery black cod ex­udes a cleaner taste with white se­same sauce and a gar­nish of pu­lut hi­tam fu­rikake, Meix­can tar­ragon and sea grapes. $150 (omakase); $45 (three-course set lunch).
