An à la carte seafood buf­fet that in­cludes a boun­ti­ful ar­ray of puffer­fish? We’re lov­ing the sound of Si Chuan Dou Hua Restau­rant’s Colours of the Sea of­fer­ing. From now till 12 Jan­uary 2020, each of the restau­rant's three out­lets – TOP of UOB Plaza, PARKROYAL on Kitch­ener Road and PARKROYAL on Beach Road – will of­fer the same menu and some dif­fer­ent sig­na­ture dishes.

Famed for his hearty Can­tonese-styled soups, PARKROYAL on Kitch­ener Road’s ex­ec­u­tive chef Le­ung Wing Chung has pre­pared a dou­ble-boiled soup filled with as Shunde fish­balls, mus­sels and prawns. Served along­side the soup are 30 dishes, pre­pared à la minute, in­clud­ing the tangy Boiled Sliced Fish in Pre­served Chilli Broth and the Crispy Fish Skin with Salted Egg. At the TOP of UOB Plaza, the puffer­fish is served in two mouth-wa­ter­ing styles: Sliced Puffer­fish with Fresh Chilli and Se­same, and the Hand­made Steamed Puffer­fish Dumplings. The lat­ter is hand­crafted by mas­ter dim sum chef Peng Yi Chun, who uses squid ink to cre­ate the like­ness of the fish. Tuck into fiery Sichuan cre­ations by PARKROYAL on Beach Road’s ex­ec­u­tive chef Zeng Feng, such as the Steamed Gi­ant Garoupa in Sichuan Pep­per­corn Sauce. Lo­cally-sourced garoupa is doused in a sour, spicy and numb­ing bright yel­low pep­per­corn sauce. Too spicy? Opt for the Chilled Sea Grapes driz­zled with a re­fresh­ing vine­gar and sugar dip.
