An à la carte seafood buffet that includes a bountiful array of pufferfish? We’re loving the sound of Si Chuan Dou Hua Restaurant’s Colours of the Sea offering. From now till 12 January 2020, each of the restaurant's three outlets – TOP of UOB Plaza, PARKROYAL on Kitchener Road and PARKROYAL on Beach Road – will offer the same menu and some different signature dishes.
Famed for his hearty Cantonese-styled soups, PARKROYAL on Kitchener Road’s executive chef Leung Wing Chung has prepared a double-boiled soup filled with as Shunde fishballs, mussels and prawns. Served alongside the soup are 30 dishes, prepared à la minute, including the tangy Boiled Sliced Fish in Preserved Chilli Broth and the Crispy Fish Skin with Salted Egg. PARKROYAL on Kitchener Road.

At the TOP of UOB Plaza, the pufferfish is served in two mouth-watering styles: Sliced Pufferfish with Fresh Chilli and Sesame, and the Handmade Steamed Pufferfish Dumplings. The latter is handcrafted by master dim sum chef Peng Yi Chun, who uses squid ink to create the likeness of the fish. Tuck into fiery Sichuan creations by PARKROYAL on Beach Road’s executive chef Zeng Feng, such as the Steamed Giant Garoupa in Sichuan Peppercorn Sauce. Locally-sourced garoupa is doused in a sour, spicy and numbing bright yellow peppercorn sauce. Too spicy? Opt for the Chilled Sea Grapes drizzled with a refreshing vinegar and sugar dip.
