Creative items such as Steamed Prawn and Carrot 'Rabbit' Dumpling together with Deep-fried Pork 'Char Siew' and Pine Nuts in Glutinous 'Carrot' Pastry perked up the dining experience with its cute dainty presentati­on while Deep-fried Homemade Squid Tofu with XO Sauce and Deep-fried Bacon Roll with Enoki Mushrooms and Prawns satisfied the palate for intense savoury flavours.

A highlight was the Roasted Chicken Skin with Prawn

Paste in Sesame Pockets, which is a remake of the traditiona­l 'shao bing' that envelops a variety of fillings. It offered addictive crispy bites that were savoury, spicy, and very easy to polish off. Preparing the dish though, required great skill and time from the chef, who carefully selected chicken of at least 2kg to ensure it yielded enough skin with the desired thickness for roasting; and precise knife skills were required to remove the chicken skin in its entirety without any breakages. This dish whetted our appetites for more moreish delights such as perfectly prepared Slowbraise­d Beef Brisket, Tendon and Radish and Braised Noodles with Spring Onions, Ginger and Yabbies.
