INGREDIENT­S

Charcoal Agave nectar

METHOD

Use 10% weight of charcoal to weight of agave nectar

Dip red hot coals into a pot of agave nectar

Close the lid, leaving it to smoke for one hour. Check half-hourly.

The charcoal caramelise­s the agave and gives a great burnt flavour. ( You can use regular agave or honey. Dilute syrup with water at a ratio of 1:1)

INGREDIENT­S

50ml cold brew tequila 15ml charcoal agave nectar Pinch of sea salt

45ml single origin espresso shot Chocolate powder to garnish

METHOD

Add all ingredient­s and ice to a cocktail shaker

Shake vigorously to create a frothy head. Strain into a coffee cup
