FLOURLESS CHOCOLATE SPONGE

300g egg whites
300g sugar
200g egg yolks
100g cocoa powder
Whisk the egg whites and sugar together to stiff peaks. Fold in egg yolks and sifted cocoa powder. Use a tray that is 60cm by 40cm and pour in 850g of the mix. Bake for 12 minutes in the oven at 200°C.
