#3 Suckling pig
Huber’s rolled suckling pig loin and belly makes a great roast for eight people. The tender meat paired with thin, crispy skin is a combination that’s sure to be a crowd-pleaser at Christmas dinner. Cooking tip: Roast at 180 degrees Celsius for about an hour; then, turn up the heat to 220 degrees Celsius for the last 10 minutes. #01-33 Maxwell Food Centre, 1 Kadayanallur Street facebook.com/3rdculturebrewingco
First impressions: Sometimes you’re after more than the average Tiger to wash down a hawker meal. Taking up one of the stalls in the bustling Maxwell Food Centre is 3rd Culture Brewing Co., boasting 12 beers on tap in one cramped space. The Chosen One: It’s all about craft beer at this bar and, with a dozen on offer, you can enjoy wheat beers, IPAS, pale ales and stouts. For something different, try Palate Trip ($10) brewed by 8 Wired Brewing. Made from a combination of American and New Zealand hops, it’s been deliberately soured to add a tart flavour to the sweet malt. The Cheapskate: Considering what you can pay for a craft beer in Singapore, 3rd Culture manages to keep its prices low. For example, you can enjoy the German-inspired wheat beer Hefeweizen, brewed by Australia’s Hargreaves Hill, for just $8. Bite on this: 3rd Culture doesn’t serve food – there’s simply no room with the impressive refrigeration system that keeps your beer cold. But you’re in Maxwell, with the chicken rice made famous by Anthony Bourdain served just opposite, so you’ll easily find something to eat. Last but not least: You know what it’s like at your favourite hawker centre – there are plenty of delicious food options but not much when it comes to alcohol. This would explain the constant queue at 3rd Culture on Friday and Saturday nights. Get there early to enjoy the unique flavours on offer, or before your favourite beer sells out.
