Grand Hyatt Singapore’s multi-cuisine concept restaurant Mezza9 has joined the ever-growing list of eateries to focus on “conscious eating”, with a newly redesigned menu featuring sustainable ingredients – including Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC) certified sustainable seafood, organic herbs from the hotel’s very own rooftop gardens, and organic greens from cooperative farms in Singapore and Cameron Highlands – used in each of its seven kitchens. Some of the new menu must-tries include Nuea Yang-grilled Black Angus beef salad with tamarind and chilli ($48) from the Thai kitchen, Sushi Kiwami ($98) – seven kinds of nigiri, five types of sashimi and two rolls – from the sushi counter, and the great-for-sharing Mezza9 clam and lobster bake ($128) from the grill, which includes Maine lobster, tiger prawns, clams, black mussels, smoked sausage, sweet corn and potatoes.
