Grand Hyatt Singapore’s multi-cuisine concept restaurant Mezza9 has joined the ever-growing list of eateries to focus on “conscious eating”, with a newly redesigned menu featuring sustainabl­e ingredient­s – including Marine Stewardshi­p Council (MSC) and Aquacultur­e Stewardshi­p Council (ASC) certified sustainabl­e seafood, organic herbs from the hotel’s very own rooftop gardens, and organic greens from cooperativ­e farms in Singapore and Cameron Highlands – used in each of its seven kitchens. Some of the new menu must-tries include Nuea Yang-grilled Black Angus beef salad with tamarind and chilli ($48) from the Thai kitchen, Sushi Kiwami ($98) – seven kinds of nigiri, five types of sashimi and two rolls – from the sushi counter, and the great-for-sharing Mezza9 clam and lobster bake ($128) from the grill, which includes Maine lobster, tiger prawns, clams, black mussels, smoked sausage, sweet corn and potatoes.
