Basic Risotto Recipe

Ingredient­s

• 1 cup (400g) Arborio rice • 1 tablespoon olive oil • 2 tablespoon­s butter • 1 onion, finely chopped • 4 cups hot prepared chicken stock

Instructio­ns

1. Heat oil and butter in a saucepan on medium heat. 2. Fry onion until glassy. 3. Stir in rice and cook for two minutes. 4. Add three-quarters of a cup of hot chicken stock, stirring until absorbed. Repeat with remaining stock, a quarter to a half a cup at a time, stirring for about 16 to 20 minutes.
