Chef-owner Ivan Brehm refers to the cui­sine at one Miche­lin­starred Nouri as “cross­roads cook­ing”, with dishes re­volv­ing around food sto­ries from across the world.The same sen­si­bil­ity now ap­plies to the bar pro­gramme, thanks to its res­tau­rant and bev­er­age man­ager Matthew Chan. Each of the four cock­tails on the menu is in­spired by a re­gional cel­e­bra­tion:A Toast to Good Health is a nod to Shogatsu, the Ja­panese NewYear, con­tain­ing ginjo karakuchi sake and a herb-and-spice tinc­ture sim­i­lar to the sake drunk dur­ing the fes­tiv­i­ties; An Act of In­tegrity looks to Holi, the Hindu fes­ti­val that marks the start of spring, and fea­tures two rums, chai faler­num and al­mond milk.
