Leave the skin on root vegetables

Up to 25 per cent of a vegetable’s nutrients are found in its skin, so throw out your peeler and wash it thoroughly instead. The Agri-food & Veterinary Authority of Singapore recommends a 30-second wash with clean water – without using any special detergent – followed by 15 minutes of soaking to remove dirt and traces of pesticide. If you’re still worried about the latter, buy organic vegetables from your local farmers market. If they come complete with leafy tops, chop these off before you pop them into the fridge. Otherwise, the leaves continue to draw nourishment from the roots, leaving fewer nutrients for you.
