PUTIEN brings back the annual Eel Festival, which celebrates the freshest harvest in between the Summer and Autumn months from Shunde, Guangdong. These live eels, which are storing fat as it prepares for migration season, give the eel a sweeter, bouncier, and softer texture. Among 19 known species of eel, PUTIEN uses carefully selected Japanese Eels that are only fed with wild cod fish meal, resulting in meat of superb quality. Throughout the month of September, PUTIEN presents the seasonal eel prepared four ways. A favorite is Fresh Eel Cooked in Spring Water, where the dish is prepared right upon serving. Sliced eel, goji berries, and ginger are first placed into the special ceramic pot, before natural spring water is generously added until the eels are fully submerged.
