WINES TO TRY
Korak Chardonnay Sur Lie
With more than 20 vintages under his belt, Velimir Korak is a sure-footed winemaker who draws out a consistent style in all of his wines. Korak’s wines express vibrant fruit flavours, crisp acidity, and a floral overtone. His interpretation of the Chardonnay has an oaky sheen and a botanical lift.
Ivancic Gri n Dark Side Brut
Like a summer fl ing, Portugizer has a fun- but- nothing-serious reputation in Croatia. Winemaker Krešimir Ivancic instead gives this variety its due respect and makes a serious wine from it. Made in the traditional method, this wine expresses robust berry fl avours packed in a weighty, textured body and a gentle tug of tannins. If you like Lambrusco, this wine will certainly appeal to you.
Šember Rosé Pjenušac
A méthode traditionnelle sparkling wine made from Pinot Noir, it has delicate and persistent bubbles. This is a positively angular brew with fl avours of raspberry, strawberry, candied apple, and a hint of bread.
Tomac Pjenušac Amfora Brut
Tomac is supposedly the world’s first to commercially produce a méthode traditionnelle sparkling wine made in amphora, which in turn inspired several famous grower champagne makers to experiment with clay vessels. Made from a blend of Chardonnay and a mix of esoteric local varieties from Plešivica, this was macerated for six months in buried clay vessels before further ageing in large oak casks and second fermentation. It is an eye- opening wine redolent of some vintages of Krug. Expect flavours of nuts, citrus peel, pumpkin, and dried apricot, cloaked with a brioche- like character and bright acidity. It is gently eervescent with the finest bubbles.
