Panamer­i­cana is the ul­ti­mate ca­sual Bar & Grill, which opened its door in April, wel­com­ing food­ies from all around the world. It brings to life mouth-wa­ter­ing fare from the rich di­ver­sity of cul­tures and cuisines found in the 14 coun­tries along the Pan-amer­i­can High­way that stretches through the North, Cen­tral and South Amer­i­cas. Says owner Ju­lian Serna, “I wanted to not only delve into the re­gion of my her­itage, but also to cre­ate a fun and ap­proach­able mod­ern take on the flavours and cuisines.”

Head­ing up the kitchen at Panamer­i­cana is Ex­ec­u­tive Chef Mathew Woon, who has de­signed the menu to cel­e­brate the di­verse cuisines and pro­duce of the Amer­i­cas. Lamb, rubbed with rose­mary and thyme, is grilled to a per­fect pink; Trout is baked in a salted crust for flavour­ful good­ness teased with a tangy tomatillo salsa verde; while whole Colom­bian Chicken is glazed with chilli and slow-cooked on low heat to re­tain its juicy ten­der­ness.

Span­ning 6,000sqft, Panamer­i­cana sits on a prime spot in Sen­tosa Golf Club, set against a sweep­ing view of the South China Sea. In­dulge in its sig­na­ture cock­tails, share serves and boozy con­coc­tions ac­com­pa­nied by breath­tak­ing sea views and lush tropical green­ery. It is the only Bar & Grill in Sin­ga­pore that houses an Ar­gen­tinian Asador where whole meats are grilled in plain view, which is bound to ex­cite din­ers both young and old.
